Can you find superfoods for free? How about superfood weeds!?? For breakfast, I made lavender berry yogurt with foraged purslane. Yes, weeds for breakfast! Purslane, also known as duckweed, grows almost anywhere. I usually see purslane popping up in the park, but if you're foraging, you'll want to find areas that are free of pesticides and grown in clean soil. One of the best places to forage is your local organic farm! I'm happy to help farmers get rid of their weeds by eating them :> Purslane is an incredible plant, it packs a nutrient profile higher in vitamin E than spinach, with more beta-carotene than carrots, and it's one of the only leafy greens that is high in Omega-3s! It's tasty too. The flavor is slightly tangy, lemon, earthy, and just a hint of peppery bitterness. I actually find the stalks, which are light and crunchy, to be the tastiest part.
