This is my first successful naturally leavened sourdough bread. Of course, it's made with 100% whole grains -- I used 50% sprouted winter wheat and 50% sprouted spelt -- water, salt, and the starter. The rise I got was much better than any of my yeast breads in the past and the texture and flavor was close to the bread I've bought from artisan bakers in NYC. The game changer for me was understanding the mechanics of the starter and then treating it like I would any other ferment. It needs a little bit of food (flour and water) and love everyday and it rewards you with unlimited fresh bread. The starter was gifted to me from the amazing baker, Jen, from Lilly Pies in Princeton. It was so sticky, bubbly, and gooey, I knew it would change my bread game. Thank you so much Jen! Flourless chocolate love cake, made entirely of whole foods. Inspired by @feastingonfruit ‘s amazing recipe, I made a few tweaks to make it #wfpb. Rather than use coconut to garnish, I made a frosting out of purple sweet potato, dates, and lavender. The cake is blueberries, fresh ground cacao, dates, baking powder, and vanilla bean. Watermelon Poke Bowl, inspired by @avantgardevegan and made by @ayamamichi . The "tuna" is watermelon that was baked and then marinaded for 2-days in lemongrass, ginger, and tamari. The flavor is unreal and the look...definitely evokes poke! Can you find superfoods for free? How about superfood weeds!?? For breakfast, I made lavender berry yogurt with foraged purslane. Yes, weeds for breakfast! Purslane, also known as duckweed, grows almost anywhere. I usually see purslane popping up in the park, but if you're foraging, you'll want to find areas that are free of pesticides and grown in clean soil. One of the best places to forage is your local organic farm! I'm happy to help farmers get rid of their weeds by eating them :> Purslane is an incredible plant, it packs a nutrient profile higher in vitamin E than spinach, with more beta-carotene than carrots, and it's one of the only leafy greens that is high in Omega-3s! It's tasty too. The flavor is slightly tangy, lemon, earthy, and just a hint of peppery bitterness. I actually find the stalks, which are light and crunchy, to be the tastiest part. Homemade potato gnocchi, basil, lemon, and garlic scape walnut pesto, polenta cauliflower puree with diced beets, radish, and sauteed rainbow chard. Red pepper and parsley garnish. With each attempt at homemade pasta, the results are getting better. This time I let the riced potato dry out a bit more and I used a combination of sprouted whole wheat and spelt flour. I used to fear the fructose from fruit because I thought consuming too much sugar was bad. The reality is that whole fruits and extracted or processed sugars have complete opposite effects. More fruit consumption is associated with greater health, less weight, and healthier blood sugar. The reasons are complicated but it essentially boils down to this: whole fruits are incredibly nutrient dense, full of fiber, vitamins, minerals and phytonutrients while being relatively low in calories and high in water. It is likely the healthiest “fast food” on our planet. I usually eat a lot of fruit in the morning or as a pre-workout meal because it’s so hydrating and gives me a ton of energy.
