Blueberry Cream Pie - made entirely of whole foods (no added oils, sweeteners, refined flours, etc.). The filling is fresh blueberries, ground chia seeds to thicken, and lemon juice.  The crust is ground almonds, ground flax, and a dash of salt.  The cream is cashew, vanilla bean, date, and lemon zest. I wanted to make a less sweet version of this summer classic pie and was quite happy with the result.  The crust is pre-baked and for the filling I made on the stovetop with half the blueberries until it formed a jammy texture, and then I added the rest of the fresh blueberries.  Everything held together nicely, the crust came out flaky, and the flavors meld beautifully.  #wfpb #veganblueberrypie #freshblueberries #homemadepiecrust #glutenfree #nooil #nosugar #summerdesserts #organicproduce #healthydesserts #veganpie #halfbakedhalfraw #notfullyraw #highvibes #yogafood
