Amaranth porridge with blueberries, cherries, basil, fennel, and flowers. Herbs contain unique health benefits from their flavonoids and volatile oils. The science on herbs is fascinating. For example, basil contains a volatile oil that blocks an enzyme in the body called cyclooxygenase (COX). Many non-steriodal anti-inflammatory drugs (NSAIDS), like aspirin and ibuprofen, work by inhibiting this same enzyme. Studies show that basil can help heal and provide relief from inflammation, and may be particularly beneficial for arthritis.
