Amaranth porridge with blueberries, cherries, basil, fennel, and flowers. Herbs contain unique health benefits from their flavonoids and volatile oils. The science on herbs is fascinating. For example, basil contains a volatile oil that blocks an enzyme in the body called cyclooxygenase (COX). Many non-steriodal anti-inflammatory drugs (NSAIDS), like aspirin and ibuprofen, work by inhibiting this same enzyme. Studies show that basil can help heal and provide relief from inflammation, and may be particularly beneficial for arthritis. A very appropriately named KING trumpet mushroom! We grilled these majestic fungi with a light coating of balsamic and coconut aminos. I like to slice them into rounds and seer them until just tender. The texture and flavor is deep umami, meaty and light at the same time. Mushrooms are one of the few plant-based foods (though not technically a plant) that contain vitamin-D. Blueberry Cream Pie - made entirely of whole foods (no added oils, sweeteners, refined flours, etc.). The filling is fresh blueberries, ground chia seeds to thicken, and lemon juice. The crust is ground almonds, ground flax, and a dash of salt. The cream is cashew, vanilla bean, date, and lemon zest. I wanted to make a less sweet version of this summer classic pie and was quite happy with the result. The crust is pre-baked and for the filling I made on the stovetop with half the blueberries until it formed a jammy texture, and then I added the rest of the fresh blueberries. Sprouted tongue of fire beans. I always try to sprout my beans before cooking them. Most organic beans -- even if bought in bulk -- will sprout. Sprouting is a great reminder that plant-based foods, even dried beans, are living foods. They just need a little soak to wake up! Sprouting also unlocks more of the nutrients and makes bean more digestible. The food we eat provides the energy we need to thrive. So why not eat more of what comes alive!
