Green jackfruit and tofu curry over millet, purple potatoes, and rainbow cauliflower. @ayamamichi cooked this curry in the Instant Pot, and it was even better the next day! My first attempt at making fresh gnocchi. I used just three ingredients: steamed potato, sprouted whole wheat flour, and nutritional yeast. I learned two things from this trial: 1) The kind of potato makes a huge difference. Russet potatoes will produce the fluffiest texture. 2) The longer I cooked them, the tougher they got. For this recipe I found they cooked perfectly when they float to the top of the boiling water and cooked for just another 30 seconds. Spring noodles with artichoke hearts, heirloom tomatoes, beets, and olives with a raw pecan, fig, and sweet pepper sauce. Strawberry shortcake made with @honeybrookorganic farm's organic strawberries, oil-free, refined-sugar free, and whole grain! I was looking for a whole food version of a shortcake and stumbled on @feastingonfruit 's "Healthy Vanilla Cake w/Chocolate Frosting" recipe. Her cake uses just a handful of simple whole ingredients: dates, oats, baking powder, and vanilla bean -- I love simple recipes like this. I baked it in a 7" springform pan and sliced it horizontally to make 2-layers. The texture was perfect, fluffy and sweet...fresh vanilla makes a big difference! For the frosting, I made a cashew cream with lemon zest. Hopefully, everyone knows that Instagram does not equal reality. I like to share pictures of beautiful, colorful, delicious creations that inspire, but most days I keep it real simple.
