My favorite meal of the week is often my "leftovers bowl." I like to combine bits of salads, beans, pasta, and sauces and enjoy the bold mashup of flavors. This was squash, cannellini beans, corn salsa, potato, basil and chickpea mash, mixed greens with balsamic, and corn salsa with lime. Yum!
