The simple delight of a fresh five minute salad. When I get busy, I eat simply by combining raw foods and starches that cook quickly like these yellow and red potatoes that I microwaved for 2.5 min while I chopped the veggies. It may not be as Instagram worthy but darn this was a great lunch. #wfpb #simplicity #5minutelunch #eatarainbow #pbyogi
